Reminiscent of an extreme Australian Summer’s sunset, this mead pours bright golden in colour and has green apple, tamarillo and savoury aromas.
Blending Green Mallee and Red Gum honey we primary fermented with our house yeast and then aged on gold peaches, nectarines and brettanomyces c. for 6 months.
Spending a further 3 months bottle conditioning with Brett this mead will continue to develop in the bottle. Dry and complex yet subdued whilst cold which opens up into a beautiful enticing mead and like the tide offers two sides.
Served chilled and enjoy as it warms to room temp.
