This mead is a tribute for all we can be grateful for in these uncertain times. Tribute was born in 2019, in what felt like simpler times. Slow cooked 7 hour roasted NSW Red Gum honey, toasted Ecuadorian cacao nibs and Ethiopian coffee beans, nutmeg, Ceylon cinnamon and Madagascan vanilla bean are the base ingredients. With a gentle hand, intermingling and expressive but none taking centre stage. Slowly ageing, ignorant to the worlds happenings, Tribute continued to do it's thing.
Co-pitching our house yeast, brettanomyces and lactobacillus we then let the mead ferment for 12 months before raking off the solids. After fermentation, we left this mead to age and develop in complexity on French oak. With an understanding that time is not of the essence, all components coming together to create a revelatory experience not felt with our other meads.
We're doing it tough and maybe you are to? But in tough times come the opportunity to stand tall and be grateful for the things we have. This is our Tribute to all we are grateful for in this world.
