What happens when you combine the perfect ratio of locally sourced raw Australian honey and ferment it with a yeast typically used in the French farm regions?
There's only one way to find out! With literally no residual sweetness after the saison yeast fully fermented all the available sugars, it's amazing how the reflection of honey that remains pairs wonderfully with the slight spicy notes achieved from the yeast. Some amounts of Citra and Mosaic hops complete the recipe.
Fermented slightly cooler than a typical Farmhouse Ale, this allowed us to control the perfect spicy and sweet notes during fermentation resulting in a clean yet defined tasting product.
