This Mead is exactly what we were aiming for.
Our non-sacc house yeast with low flocculation qualities and blackberries in primary was fermented on oak, followed by a late addition of dry hopping in secondary. It reveals a tart and hazy mead with initial notes of funk followed by wonderful complexity, high attenuation and lovely tart berry backbone.
Finally a smooth balance of honey rounds out the flavours for a Mead made like no other.
We recommended decanting off the fine lee's for a clear mead or gently rolling prior to pouring if for the haze and added funk.
