Adding carbonic macerated mangos: a process of allowing the whole fruit untouched to ferment in an oxygen deficient/carbon dioxide rich environment. This allows the natural sugars to ferment in their skins and heightens both the flavour and aroma. Added to secondary to age, the manjo brings funk, molasses, pineapple and apricots.
A dry fruity, funky, bitter mead, ensuring the flavours balance and combine, the process is more than the individual ingredients.
